Because it can be. Why have another sanitised, boring and vanilla adaptation when we already have the anime, various smaller ONAs and OVAs and of course, the games? Manga is a medium that affords a decent amount of freedom with regards to violence, why not have a bit of fun with it? Plus you need an appeal over the anime.

Gamefreak/TPC are cheap and don't hire good writers. They hire people who think "more mature" means "more angry and violent". The same thing happened with PLA. The writers spat in the face of the idea of Pokemon as generally friendly and approachable creatures, and instead decided to write that they murder people and slaughter villages.
