The rock type has to do with being from the stone age, not being fossilized.

If fossil mon are indeed based on dinosaurs from our world that's not true. Dinosaurs did not exist during the Stone Age. The dinosaurs died out about 65 million years ago. But, it's a fictional world with a fictional timeline and fictional animals, so who knows who's right here? Gamefreak for sure doesn't.
If we have to believe this pokemon card, I guess so. Maybe their bones were the only ones to survive for so long due to them being rock types in the first place, meaning all non-rock type dinosaurs went extinct (except for those that didn't go extinct, like tropius.)

Really nice artwork, weird that they didn’t use Aurorus though.

Aurorus (and Amaura) live in colder climates while what is depicted in the card's art is clearly tropical.

Nah. This is clearly an island where revived fossil pokemon have been released to roam around. Jurassic park style. Tropius fits into the tropical environment and ecosystem, and so was also released there.

Relicanth couldn't made it to the card probably because it lives on deeper waters (like on Hoenn, the region where is from)

Thought to have gone extinct, Relicanth was given a name that is a variation of the name of the person who discovered it. The reason it hasn’t changed at all in a hundred million years is that it’s apparently already a perfect life-form.

Perhaps the only fossil pokemon we find are rock types, and there are many, many extinct Pokemon that aren't rock. its. just for thematic purposes and gameplay.
