Lance is more associated with Red Gyarados in the anime because it's a Pokemon he caught on-screen in Johto, and it shows up again during the Aqua/Magma fiasco in Hoenn where they decided to use Lance again instead of Steven for some reason.
Plus there's also the fact that Ash now has a Dragonite of his own, and Iris has one too. The Charizards at least have different gimmicks to distinguish them, and Iris's Dragonite has an angry face to set it apart from Ash's, so that's probably why they don't show Lance using Dragonite.
