If they can justify giving Lance a Dynamax Bandby saying that he trained at Galar's Dragon Gym and modeled his outfit after their gym uniform, I'm sure they can up with something to justify giving Iris a gimmick. Gigantamax Lapras would be perfect for her though.
I doubt their teams will be the same as the games. Leon for instance likely isn't going to have the Galar starter (except maybe Rillaboom because Goh's Grookey isn't going to evolve), Haxorus (Iris is here), or Aegislash (the referee rides around on one). In the games, he has Seismitoad, Mr. Rime, or Rhyperior depending on which starter you picked, so here they can just give him all three of those Pokemon.
Outside of anime canon Iris is probably the closest in powerlevel to the main characters, becoming champion at such a young age. In anime canon she's busted as fuck, taking over the League after Ash left.. If anyone could pull off a win with no gimmicks before being fed to shillzard, it'd be her.

Since Iris and Ash already battled we definitely aren't getting that again, the best possible outcome is her beating Lance and then getting fed to Leon or Alain. She could beat Steven/Diantha and maybe Lance but she's not even getting a whiff of semifinals due to not having CHARIZARD on her team.

Game-wise (solely looking the main game, not recounting rematches):
