Then why do Pokemon eat other Pokemon solely and not random animals? Why has Indian Elephant been retconned to Copperajah in Raichu's Pokedex entry? Why do humans eat Farfetch'd and Slowpoke Tails when they could eat actual animals?

Actually these are the last remnants of earth fauna. Historically they existed, which is why some monsters are classified as mice and such, and indian elephants being recorded victims. There wouldve been a need to preserve them, but natural selection did away with that

Also note the curious language they use "real animals" and also "animals from the real world" rather than just saying animals don't exist and even saying Pokémon serve as a *replacement*. Shudo also used the term "real animals" and the games have referred to Pokémon as "wild creatures" before, almost as if Pokémon are meant to be stand in for something, hmm.
