Very hard, I've helped my grandpa and my father build and renovate a few houses, theres way more that goes into it than you would ever think
Buy materials you need and build to code. Sub out for stuff you don't know how to do or need a license for like tying in electrical and water.
Zoning and build codes can very easily get in the way.
It's not easy and you will need help with everything if you have no idea what you're doing. But the pay off is worth every second.

Dunno what it's like in Deutschland, but in the states it can be easy as hell or a huge pain in the ass depending on state/county. I've built homes and cabins. Easiest is doing an off-grid build that forgoes electricity and has only asic plumbing. If you're doing much more than that you had better have experience in plumbing and electrical or you will get raped by contractors. Masonry is basically impossible to do if you are concerned about affordability.
Foundation, cystern at least 15 meters from the house, where pipe and wiring should go on walls, will there be heating system?

-an engineer for statics planning and statics overwatch
-a trade guy (Handwerksmeister aus dem Bauhauptgewerbe) for correct constructural (moisture, sound proof, etc) execution

also back in the 50s there was very very little building codes
houses were small (=small beams), not insulated (=uncomplicated details), cellars were moist (people had low expectation)
and men were rugged.
