Job market is actually pretty shit for entry level. The entry-level jobs are actually early-career jobs that still require years of experience, so it's a huge hurdle to get your foot in the door anywhere.

Accept the job offer and ignore the vaccination proof requests. If they threaten your position, inform them that you are religiously opposed. If they try to demand documentation, refuse, they aren't allowed to question your beliefs and they know that.
