Can someone explain to me how UNIONIZING, as in, gathering together workers and paying a little bit of their paycheck into a bank account someone else controls, increases wages? Wouldn't the business owner just hire new workers? And even if wages did increase, the benefits would negate if you're still paying extra money into the union. Isn't it more effective to use those funds to start a competing business and use those profits to pay better wages?

The idea is that you unionize in such big numbers that it's basically unfeasible for the company to replace all of you. You then bargain for higher wages with the threat that you will all stop working until you get what you want. Union dues really aren't much, I pay into Teamsters and it's 2.5h worth of pay per month and that covers my insurance as well

A union is a body that negociates on behalf of a bunch of people, their collective bargaining power holds more influence than individuals attempting to bargain with their employer.
A worker can't present much of an ultimatum to an employer since he is easily replaced. a hundred workers are a lot harder to replace at once. Workers on strike would historically also block replacement workers from entering the work place. Men crossing the picket line and attempting to go to work anyways, be it because they arent on board with the general strike or because they've been hired to replace those workers are refered to as "scabs" and these could be victimized by the protesting workers, too. on occasion, large enough protests could devolve into what could almost be described as a civil war with heavily armed forces on both sides like during the West Virginia coal wars
