Your first error is in thinking that refined seed oils have nutrients.
They don't.
They are pure refined fats with zero vitamins and zero minerals.
Plus loads of toxic omega 6 which causes all sorts of health problems.
They make good motor oils though.

Olive oil will oxidize at medium temp. Low heat only if you cook with it. But it is a based oil if you don't ruin it with heat.
I just use ghee for everything personally. But I could use beef tallow, coconut and avocado
