user, you are forgetting that mammals have an immune reaction when chitin is detected by the body in the stomach or lungs. We, humans, are specially subseptible to this because we lack the real chitinase to dismantle chitin. Our immune system release phagocites and t cells once the body detects chitin. Nature is wise and nature knows That ze bugs are not good for us. Bugs carry several types of bacteria, this is special of their chitin, which is on a constant battle against chitin eating bacteria that are actively trying to eat it. They protect themselves with oil like secretions that give bugs their particular smell.
