I think the people of Irael are very jaded from the constant wars. They feel old on the inside and are afraid of not being normal.
You will not find an anime girl with jewish quirks coming to Israel.
Prices are more or less small city america prices on 50% of things, the rest much cheaper.
If you do come here to visit, do not go on a guided tour. The real interesting places to see in Israel are off the beaten path.

This is a stupid question but is it all realitvely safe to go around Israel solo as a white european?

It does. Though, you can not see them during the day at all until them get taken out or hit ground.

Looking foreign (no beard, blond, european or american facial structure or fashion) and sounding confident gets you literally anywhere with no one betting an eye. But if you reach an area with fences and soldiers that is your time to turn around.
It should be perfectly safe if you know what you are doing and go to hebrew cities or nature
