fusion means fusion of styles user. when someone calls food "fusion cuisine" they mean for example a restaurant that prepares foods using both french and asian flavors and preparation methods. also OP is naming "bechamel" and "espagnole" which are great sauces, sure, if you like white sauce and brown sauce--that's all those words mean. if you have ever made your own white sauce then congrats. you've made bechamel.

fair enough. idk with cuisine, i wouldn't say there's a be all end all style. rather i like different plates from different cultures. im a slav so there's a lot of dishes i imagine would be british style boring/weird to many but i grew up with it so love pelmeni, red/black caviar, shashlik, and random stuff, but then ill regularly make prime rib roast or whip up some udon with fresh ingredients and garnishes. if i had to pick one type of food to eat i'd go with sushi, i love that shit (for some reason lots of slavs love it too, was in kiev as a lad visitng a lot and there was like 1 japanese restaurant for the whole city but when i visited in 2016 there was one on every corner like a mcd's)

I just spent 2 months in greece. The average tacobell burrito blows 90% of greek food out of the water. All that country has to eat is shitty pastries, coffee, overcooked eggs, subpar to passable gyros, and chuck wagon tier meat.
