There's also still the Nova Kakovka dam, which functions as a road and railway bridge, which they would probably leave intact. The town of Nova Kakovka would also become (even more of) a logistics bottleneck.
If they also take the highway intersection north of Antonivka it Kherson essentially becomes a besieged city. In the meantime they could also apply pressure to the Melitopol direction in the east.

Yeah destroying I don't know if they'd go so far as destroy the dam, that would probably endanger thousands of civilians and cost billions to repair. At the same time though, if they leave it intact it probably stays in Russian hands.
I believe they won't do it but they have thought about it and it is a weapon of last resort, first they'll try and do the least harmful way.
