Serial numbers are checked at the bank when commercial deposits are made. Mostly checked by machine now but tellers are given lists. Casinos usually get them too. Not much danger if you are careful.

Plates are easily switched. Strong magnets to fasten the stolen one over the legit allow fast placement and removal. Assuming the 'real' plate was not modified with tape which also allows fast removal.
