Check out David Allen Coe for country. He is a great songwriter and was almost totally ignored by the music industry for his entire career. But his fans love him. Underground version of Jennings. Also check out Jethro Tull. They're dated now but they are very different from a lot of rock you hear otherwise. I recommend the albums Stand Up and Songs from the Wood.
