It's because COVID gets into your fucking brain when you get it. It gets into your brain, causes all kinds of inflammation, and you're never the same after. And each time you get it, the worse the problems become.
Not only that, but scientists are now fucking biomarkers of COVID (spike proteins) in the blood of long COVID patients up to a year after initial infection. Which means this virus has the potential to languish in your body forever
There's so much we still don't know. This is why the economy is really crashing. 35 million people in the US alone are confirmed to have long COVID. That's 10% of the population. THIS IS WHY THERE IS A LABOR SHORTAGE and even the labor that does exist is low quality. People cannot work when sick

I don't know about long COVID, but in the month since I have gotten it and recovered my anxiety has been quite high. I would assume it is mostly due to the lack of physical activity that resulted in losing a lot of gains, however. If anything it's evidence that a sedentary lifestyle consuming shit food causes you to be a fucking mental case, I would say. Really quite annoying, I can see why millions upon millions have turned into psychotic wrecks sitting inside doing fucking nothing for extended periods, like a hamster in a cage.
