I'm a chef and have been in kitchens for 14 years. Washing and then completely drying chicken helps seasonings and marinades adhere to it better and also makes it cook better. You don't want any added moisture when cooking out of a pan or a deep fryer. Grill and oven you can keep some moisture on.
