I'm a biology researcher and I use HEK293s all the time. Very popular. I guess because they transfect well -- not sure.

Anyway. It's standard in biology to use cells as kind of a biological factory to make some biological/chemical product.

I expect they're just using the HEK293 cells as a factory to produce complicated flavoring chemicals. That's very different from actually putting the cells in your food.

I'm surprised they're using human cells though. Human cells are more dangerous as they can get contaminated with human viruses. Meaning a higher risk of your food having some hep virus or whatever. But I guess they must purify the fuck out of the chemical product.
