in heavy pot or dutch, sauté onions and forage mushrooms in butter med heat until soft. Add dill, thyme, paprika, chick broth, soi sause and white wine. simmer reduces by half. In bowl, whisk flour in milk to smooth. Add milk stuff to soup and cook thicken. Over low, slowly stir in the sour cream, and lemon juice until combine. Garnish parsley and hot serve.

This is nothing. I worked at a restaurant that had a 4 foot 5 mexican (I mean, they were ALL mexicans, but...) named Jose (because of course half of them are named Jose) who used to cut cabbage for the coleslaw on a deli slicer and then use his entire forearms to stir the gigantic bin of coleslaw. This motherfucker would get elbow deep in mayo and cabbage. And be giggling the whole time. But don't worry- he was wearing foodservice gloves. The only problem is that his hairy, sweaty arms were in the coleslaw mix about 6 inches past the gloves at all times.

Chop 1/4 moons(~.25"x1")
Caramelize onions deeply in butter/bacon fat w/bit of EVOO, salt while layering(will take hours to reduce)
Mix often to release H2O
+FINE chopped garlic at 1st sign of Maillard
When reduced ~70%, deglaze with stock
+vino/cider
+lemon juice, fish sauce/Worcestershire, & Dijon (to taste)
+Bouquet
Quick boil then to low simmer for 1hr+
Toast cubed up baguette rubbed w/EVOO
Soup in croc, +grate cheese, +croutons(baguette), +more cheese, under broiler till cheese is all bubbling
Chopped parsley to finish

Watched a random ass food youtuber stumble into a gang fight in India in search of dosa. The fight broke up and one of the higher up guys in the gang bought the guy's food for him. None of this was revealed until months later when he was asked about it, he had been wholly ignorant of what he walked into while he was there.
