By the fourth century, Central and Southern Europe had adopted Christianity wholesale, and they basically just took the current image of Jesus and put it over Zeus in their iconography. Because that's how they understood what the imagery of a god was to look like, and they're both bearded white guys with larger frames (in the European representations Jesus is usually well built. Most likely because Greek tradition of sculpture and painting was basically all of well built men. So that's just how they knew how to make depictions)

Zeus was kind of a shitty god for real. Just constantly doing fucked up shit. But that doesn't mean the Greeks didn't know how to sculpt the human form. So, since Greek artistry was at or near it's peak during the advent of Christianity, and ubiquitous with the pagan Roman world that Christianity would over take, most of the actual artistic tradition comes from deviations of what was already there.
Because on a subconscious level, this type of iconography is how they understood the gods. So of course they drew their new one in line with the traditions they were already familiar with.
