There isn't a single flat earth model that can explain how night and day occurs at different times in different places. Any variation of "a big spotlight sun that travels in a halo above the earth" doesn't answer this question as it creates nonsensical errors like the sun travelling in a horizontal curve across the sky everyday and also never being near the horizon.
