I paid $45 for tunes kit audio converter. Apple music has a free trial cancel before it expires so you don't get charged. Download everything and it converts it to whatever format you want. Not saying you have to buy it but that's a way i know of and have tried

I have hundreds of gigs of anime, the first two entries of the Majikoi visual novel series, hundreds of episodes of racist podcasts that I never relisten to, and PDFs of books I can't get physical copies of (i.e. Thomas Dalton's translation of Mein Kampf).
Should probably diversify that. I've been getting physical books lately so I haven't paid attention to it in a while.

Forgot to add i always converted to lossless mp3 but whatever works for you. Back when i did it you could add and download 200 albums on apple music at a time, then I'd convert with the software and delete everything in the apple music library once i had the converted files
