At "worse" a Latina has 50% european ancestry 5% black ancestry 45% amerindian. So let's asume you're actually white (whatever you think that means) this means that the offspring between you two will have 75% european ancestry and about 25% non-white, I guarantee the children will look white.
But like I said that's probably a "worse" case-scenario, on average Latinas have 65% european ancestry, which means offspring between a Latina and a white man will have about 90% European ancestry (already better than /pol).
And you can't convince me there's literally anything wrong with breeding a Castiza with 85% european ancestry, the children will be genetically European, high chance of light hair and eyes color, they'll be as least as "white" as any average white American.
