It's simple : If you're Leftist, you're bombarded with the idea that things that relate to Social Justice are very serious matters.
You can't simply joke about Race, Sex/Sexism, Intolerance, LGBT, Feminism and other issues of Political Correctness.
They enforce Political Correctness because Politics is very serious to them. These issues are very close to their heart.
These political issues become engrained in their personality.
Their life revolves around their Political Causes.
So basically, Mocking Leftist Ideas is basically criticizing the people who hold those views.

The best example is LEftist calling anyone at the Right of Karl Marx as a Nazi.
The insult Nazi is used to dehumanize the opposition, but it's okay, because Nazis = Bad Guys, and Leftist = Good Guys, so they rationalize that with : Nazis oppress Leftist, therefore they are "punching up" instead of "punching down", and therefore it is not only acceptable to make fun of the opposition, it's the only approved way of generating humour.

It's actually just that not everything needs to be funny. There's something strange about the "right" wing in that regard. We demand that in order to be considered a leader you must be hilarious. If you aren't top tier charming you get called cringe. Seems like a great way to completely miss out on any political leader who is excellent at what they do but perhaps not very good at the popularity contest.

Humour is based on truth or absurdity. Since lefties are fundamentally dishonest and the things they want are absurd, most of their genuine attempts at himour fall flat.
Most of what they put out, isn't intended to be funny though. It's propaganda or fingerwagging or seeting insults. Their goal isn't to make you laugh, it's to make you obey. It's also this why leftism will always fail. A society is bound by lawful rule, these rules have many flaws that can be abused. You have those who fully abuse the system's flaws, bribe it etc. Some who do light abuse and some who follow it as perfect as possible.
