There's generally not a lot of blood if (a) the bullet doesn't expand, or (b) the round isn't subsonic. Firing point blank with 5.56 with FMJ means the bullet isn't expanding and the round is still transonic, hence we won't see much.

I think it's all bullshit but thats the color of your brain while alive. Light light pink, with a cream color, bits of gray.
I think we're looking at old school movie effects a lot of the time.
