European food in general was more similar to Indian food than what we have today: Lots of stews with spicy or sweet-sour aroma. Beer was sweet and mulled wine wasn't just for Christmas. Spices like ginger, galangal and all kinds of pepper (Even stuff we don't know anymore - ever heard of "paradise grains"?) were popular as fuck. Aromatic herbs like thyme, rosemary, sage etc. which are today considered typically mediterranean spices were so commonly used they were considered peasant food.
This changed with the French Revolution: While nobles before were infamous for using metric asstons of spices in everything, this became unpopular and old-fashioned because, well, guillotine and all that stuff. Nobody wanted to eat like a noble anymore.
And this dark influence is why many white people today don't use many spices anymore. As usual, the (proto-)commies are to blame for everything bad in the world.

You are not far off from the truth, back in the day food was way more seasoned, salty, spicy and in general much more heavy - while the ingredients were fresh and a lot of effort was put into making food taste good (come on, people onw are biologically exactly the same as people 500 years ago), the nutritional needs of a mostly physically-working population meant that variety was demanded in an otherwise limited selection of products - before the Americas the selection for staples was limited to pulses, bread, cabbage, standard cereals and root vegetables. Even peasants were using herbs and locally-grown additions like horseradish, mint, parsley, etc. Spices ceased to be as prized with the growth of global trade, additional of newer crops and spices from Americas and the decline of spice trade monopolies, and then with further development of mass-produced food, where cooking from scratch and preparing your own products like mince, or stock or even pickling was replaced with ready-made goods and heavy spice use diminished.
