The pay a rabbi to change the rules for them. There are thousands upon thousands of rabbis and they mostly disagree about everything. However, if just one rabbi tells you "It's ok" then it's ok with what they call god, even if all the other rabbis say it isn't.
Also it's ok to bribe the rabbi somehow to get the answer you want.
2000 years of that bullshit leaves judaism in the state you see it now, and frankly catholicism (aka the previous group of ungodly assholes that tried to take over the world) went through the same thing for the same reason.
