1. Oil does not evaporate until high temepratures so you can cook the potatoes/eggs/etc from all sides at the same time.
2. Oil is slippery so the potatoes/eggs/etc do not stick to the pan.

- avocado oil, duck fat, other animal fats for high heat cooking
- butter for low heat; ghee for high heat
Seed oils are rancid, they have to deodorize them at the factory by cooking them at super hot temperatures, denaturing them even more. They keep oxidizing after you eat them while they are stored in your fat for 2+ years causing a constant amount of inflammation all throughout your body!
