Untouchables don't exist. Different castes and subcastes exist. Subcastes are like ethnicities. Castes are like a larger description of what these subcastes have worked as and how they performed over a long time.

Most "untouchables" belong to the lower castes because they have historically performed simple jobs that don't require much complex work. Imagine a primitive black guy from an isolated island.

You can't really force him to do complex math but at the same time you don't want to kill him so you just give him simple tasks that he can do and leave it at that.

Whether or not you are untouchable depends on how other people treat you. So there isn't any difference in India to the West.
