Fallout from bombs is less dangerous and widespread than videogames lead you to believe. Just don't settle near or downwind of an area that was struck. Rural areas, where you will want to be anyways, will likely be fine. Just deprived of industrial goods and maybe electricity. Loads of houses have solar panels now though, so you can probably scavenge those as needed.

There are no targets that merit a nuclear strike in rural areas, for example where I live. And people don't really like to leave a life's work behind.
On the vaxx part, it's a 50/50 chance that you are right. But maybe the stress from the war will hasten their demise.
