The only natural barrier there is the Dnieper though. This plan wouldn't exactly alleviate the security problems Russia claims it has if it stretches beyond the Dnieper.

Rivers aren't "natural barriers". They were basically highways in the past, and they are trivial now. The Dnieper runs right across Kiev, are you saying there is some awful natural barrier separating west Kiev from east Kiev?
Time for that passed, Ukraine will not only lose territory but will no doubt have most of their equipment taken when this is over. Before this war started, the worst that could happen was Donetsk and Luhansk being given special recognition within Ukraine. That's now the most optimistic case for Ukraine. I don't see them directly annexing the territory in the OP though, more likely to create a novorussian state and give them the ukrainian equipment.
