It's weird how westerners accuse Russia of violating Ukrainian sovereignty but at the same time try to undermine China's sovereignty by supporting Taiwan independence.

Not really. It's called the right to self determination and is a keystone of the post WWII international order.

i.e. The people who live in an area decide who governs them. Ukraine wants to be independent, Taiwan wants to be independent. It's not complicated.
