the even trickier part is the logic functions of the CPUs. i understand input/output and electron flow but it gets pretty impressive on the inside of those chips.

Through repeated advancements and miniaturization, obviously. A concept was discovered and experimented on successfully. Transistors were made. They were large, inefficient and bulky. So over the years people thought of ways to make them smaller by using different methods and materials to achieve the same goal. That's basically it. Human hands can't make today's CPUs. They're all made by machines. The parts on them are just too small. But essentially the idea is to cram as many things on as small as a surface as possible.

Real talk. I Graduated with a bachelor's degree of science with a major in computer engineering, and this shit is still like magic to me. I understand many core concepts behind the processors development, but even I am taken aback by the complexity and even my understanding is near that of an ant trying to understand a house. I know where the food is, but that's about it.

I can understand why, just looking from this distance you can see the complexity but you still can't really pinpoint the fine details, you know how it works but it's still a marvel that it exists in the first place.
I think that one's either a newer Xeon or an EPYC going based on how it's all laid out, mostly just a guess though.
