Whats the difference between serfdom and slavery? I feel like getting told my people don't know what slavery is like is dishonest due to the apparent similarities.

Serfs did not own land, they were bound to it. They belonged to whoever owned the land, just like any other animal which resided within the title. Lord would buy the land and the serfs came with it.
Slaves were entirely unfree. Their master could tell them what to do at any time and control their lives completely.
Serfs were mostly free, but they still owed a few days of work to the lord, as well as a "chiefage" tax to acknowledge that he is the "chief." They'd also need permission to leave the manor, and the lord could force them to marry or at least have some say in their marriage.

Serfs got protection, a safe place to work and trade ect. BTW, slavery is happening right now. On fishing vessels in South America, Muslims by Black's in Libya, in Chinese "detention and re-education centers", North Korean prison work camps, Islamic countries, in the sugar and coco fields of Africa... that's not even including sex slavery

A serf is tied to the land, a slave is tied to the owner, although there are exceptions in history, so that's more of a generalization than a consistent objective definition.
