Motor swap into something older, fuel efficient but powerful turbo 4 banger in something useful like a small truck maybe. If I had the cash I'd also do an electric conversion of some sort. The problem with modern cars is all the damn electronics with big brother being built in. You really just want something with no connectivity that is simple and easy to work on which hasn't been made since the 90's I'm not saying that newer engines can't be better though. Modern diesel without DPF and emissions garbage would be awesome especially in in a light weight vehicle. Gimme a BMW 335d without the electronics and emissions and you got an awesome car.

build your own and put whatever engine in it you want. Most go for ford or chevy v8 but you could target fuel efficiency or even go electric. you might want their truck for practicality of actually being able to carry some supplies.

Pic related is what I drive. The thing is indestructable as long as you get to fixing any rust right away, which is rather impotant here in Canada.
build your own electric, electric isn't inherently big brother, big brother is built into all the supplemental safety and infotainment stuff. Electric that is reasonable to charge off grid really has to be light weight and probably not crazy high power though.
