Otherwise, without compensation, in one hour’s time the pilot would find themselves 31.5 miles higher than expected.

You fly AGL Heights. You hold your plane to an altitude.. say 6,000ft ASL, above sea level. You stay at certain Heights.
How that's measured is with barometric pressure.. you adjust that as you fly depending on readings from weather stations and keep your plane at certain heights.
If you're flying from sea level to an in land location, you're constantly adjusting your height as the ground comes up to meet you...
