It's a myth spun out of the real story of the Hyksos, who were canaanites that invaded part of egypt and ocupied it for about 150 years before getting run out.
Whether the Hyksos and "Hebrews," were related or not is lost to history, but probably not.

The ancestors of the Jews were the Hyksos that the Egyptians spoke about. Even the ancient Jewish historian Flavius Josephus made this claim.
They didn't say too much about Egypt because they started to write the Torah a long while after the Exodus. Before that it was probably an oral tradition and details like architecture probably passed in importance compared to staying alive while wandering the desert.

The historical Hebrew "slaves" actually were professional laborers. Their history is interesting as they were a nomadic warrior tribe that found its way into Egypt, the Pharaohs originally used them as a buffer force against invaders from Asia but eventually they were forced into non military professions which eventually led to them revolting and leaving Egypt.

The fact that certain monuments are not mentioned doesn't preclude anything from being untrue. Even if they had been mentioned people would have complained about something else. Maybe God is more concerned with people than monuments that will one day be melted down?

The pyramids are VERY fucking old, if we're actually going to take seriously the historicity of the bible, then the pyramids would have already been built by the time the Israelites were in egypt.
