Depends how many trucks are there. If a critical mass of trucks decide to stop working, they can demand anything they want and WILL get it. These trucks are the sole link in the supply chain that delivers food, water, fuel, material, you name it, it's been on the back of a truck.
If enough of them decided to join the protest, they could demand the public raping and hanging of Trudeau and they will get it once food and water stops showing up on store shelves.

There's nothing we can do to the supply chain that the Feds haven't done ten fold. We are starting to see a measurable impact on port productivity because CN and CP Rail put their guys on unpaid leave. Indeed. Thankfully, they don't have to hold out very long. The vast majority of industry operates on a "just-in-time" basis. That being, they get their material shipments just as their stocks run out. Even a minor disruption in logistics clusterfucks them seven ways to sunday.
Grocery stores are a great example of this. Food is, obviously, perishable. So, grocers only stock up on exactly what they need for a given time period. With only a few days of no deliveries, there's no food.
Medicine is another example of items with a very short shelf life. Most of the drugs kept on hand at hospitals expire in hours to days. No trucks for 2 days, no hospital treatment.
Gasoline is another. No fuel deliveries within a few days, no gas.
In other words, If enough truckers decided not to work for just a week, you run out of food, fuel, and medicine.
