The virus replicates, the body reacts. If the virus is fast and infectious enough, a presymptomatic gap appears.
Why shouldn't there not be a virus that only requires a few hundred viruses to infect?
Then, just a small spot of infected cells would be enough, if saliva would be spoken/spit from there into another mouth.
