Aizen is a sadistic monster, simple as. For all his complicated plans and legit good intentions to change the Soul Society, he often goes out of his way simply to make people miserable because he can and he takes pleasure from that.
Same goes for Gin actually. Yes, he could "technically" be called a good guy since he opposed Aizen in the end, but that doesn't make any less of a cruel socipath
