Gammamon's only whipped it out in extreme situations against the two most menacing villains in the show so far, so probably somewhere in between.
I don't think Gulus wants to hurt Hiro at all. He's waiting for Hiro to toughen up so he can fully accept Gulus as a part of Gammamon and remove the time limit on Canoweiss.
Hiro himself also isn't scared of Gulus and views him more as a curiosity. It's Ruli and Kiyo who are pussies about it.

I mean, his reference book profile literally says he "will immediately throw itself upon any Digimon that reacts negatively towards it and smash it repeatedly until it stops breathing." And in the anime itself, he's depicted as a one-track minded crazed berserker who can only grunt and yell about protecting Ruli. He already had to be sent to the timeout corner by Darcmon in his first appearance for going a bit too far.

Gulus explicitly doesn't want to hurt his little big brother. He shouts at him to get out of the way when he's trying to attack the rest of the gang and tells him to stay away during his next appearance. It's everyone else who has to worry.

Lamortmon would explicitly kill any hostile Digimon standing between him and Ruli. Hes as aggressive and destructive as Gulus, but doesnt have any of the intelligence, restraint, or maturity on that power to not mindlessly trash everything around him.
Jellymon meanwhile gets increasingly more mature and restrained as she evolves, culminating in Thetismon who pretty much acts nothing like her earlier forms. A similar thing happens with Gammamon himself when he evolves into Canoweissmon, where he develops both in intelligence and maturity.
