The transformation would end up with a new brain down to a chromosomal level. What's the scope of the changes regarding a person's behavior is debatable considering this is pure fiction and we cannot actually perform real biological sex changes. Post change the personality would adapt to the new brain and body (not to be confused with identity death) and over time the biological processes and the new hormones would have their effect. It is also worth noting that past experiences of the pre-gb time period would also have their effect. Now would the changes either be a flip ending up with an inverse result or a "default reset" is too complex and probably shouldn't be thought of too much because this scenario is already unrealistic.
