Having them deal with the Beastmen invasion of the Dragon Kingdom, expanding on Zuranon, sending their people to a refuge, giving us some history on the Theocracy and its culture and expanding on the Black Scripture.
And a great bonus would be having BSC as the main character, until the very moment he gets killed by Ainz.

I doubt theocracy will last that long. Between Ainz being super mad and Maru wanting to end it all already. At best we get Ainz killing the governing body of the theocracy and sasugaing his way into being declared Surshana reborn and absorbing the rest smoothly. But that is unlikely to be given enough focus for 2 volumes.
