What else would you call it if many chapters take a slice out of their adventure and daily life to show off how they handle things?

What plot? They're just walking.
What's going on is that it's slice of life from some particularly interesting lives. You could call it a character study, I wouldn't object, but it's still supposed to be a small slice of Frieren's life and a quiet contemplation on what it means for a tiny slice of an elf's life to be a human lifetime.

I'd say it has more than just slice of life. It's like in between slice of life and dungeon meshi level of plot.
