Not exactly an attack but Crazy Diamond reconstructing Koichi before he dies from exploding is something I will never forget, then there is Goblin Slayer using a portal scroll as a waterject cutter against an ogre.
During the first episodes some of Altair's attacks were quite cool but sadly she fell head on into powercreep after that. In fact Altair is one of the worst powercreepers I have ever seen in anime, I understand it was on purpose to show how awful powercreep fan writing is at a meta level, but I still feel it was such a waste.
