I like a self insert character who isn't juvenile (is an adult) and it's a power fantasy (doesn't have any special powers, or at least not much more than other males around him)

It's not about the type, it's about the writing. Bad writing will botch both types, good writing can pull both of them off.
I think the same thing happened to me, though I couldn't stand watching enough to say if I'd appreciate him more when I was younger
Light and Shinji are both ok protagonists, neither of them is for self inserting.

First off the Death Note is a near embodiment of power, with the various rules being more interesting caveats for story to play around with and make it possible for him to be taken down. He's shown enjoying his power on many occassions. Even if you think you're doing the right thing it's as much a power fantasy as wanting to be the president and cure hunger. A lot of the story was specifically about his hubris in these moments, including the downfall as mentioned. Scarface, Walter White... You can have power fantasies that also serve as cautionary tales, they go hand in hand.
Death Note is the power fantasy, but not Light. He's just a terrorist with a god complex.

I'm not sure how you'd remove Light from the equation other than by saying "YOU (audience) OWN THE DEATH NOTE AND CAN KILL ANYONE" it's my understanding that you need a character to wield whatever measure of power we're seeing being used. It's okay if you didn't specifically insert as Light but plenty of people did and that's what I'm getting at, which was obviously intentional and gave it the show's thriller qualities. Even before he dies, L was not the main character

Heh. I just read what I find interesting. Which is about 98% non-fiction. Just read a book that's similar to Death Note. It's fine to move on from a book if you're not interested. You either read a book because you think it's interesting or it reads-well or both. Start with something familiar, move further away as you go.
I like Taleb's Incerto though I keep starting over and dropping it in the middle. Haven't finished it yet I just keep getting distracted by other books and read those instead. Not to worry though, you should read for pleasure and to become a better human.
Can a character have nuance perhaps? Don't stick to one thing, maybe shift depending on their mood and situation?
