Naturally, your favorite anime. You notice a lot of details you missed the first time around and have a lot of fun watching everything play out from a new perspective.
Boku no Pico
There are some pretty obvious examples.
Oh, that's easy.
There are plenty of anime that places easter eggs, symbolism, and interpretative methapors that is nearly impossible to catch on 1 watch
Kill la Kill is overflowing with references with 90's culture
Sora no Woto presented the history of their world in just short glimpses
Kemono Friends presented itself as cheerful show but the ruins on the background revealed a tragic history
86 had plenty of symbolism that ranges from placing the character's reflection as headless, walking with your neck on the sword, and presenting the backstories of characters via glimpses of their everyday life
(one character was noted to always refuse taking a group bath. Later, it was revealed she has words tattooed on her back. You get to see only a few letters but if you look closer and spend more time, it actually spell "Whore's Daughter". Revealing she was half-blood)
The best and primmest example of "Gets better with every rewatch" are shows like Haibane Renmei which uses metaphors to depict purgatory and regrets in life
Land of the Lustrous seem like an ordinary action show at first but rewatching would reveal its intricate level of understanding of Buddist iconography and theology

FMA BRotherhood first episode is an eye opening experience, once you watched it all and have it fresh in your memory.
Also generally everything that has some sort of time travel plot.
Also anything thats like evangelion, where you have LE EPIC PLOTWIST THAT RECONTEXTUALISES EVERYTHING *tm* at the end and earlier episodes mysteries make more sense in the grand scheme of things.
Attack on Titan
It's like an entire new show when you actually know what's going on.
Rewatching also makes it easier to appreciate just how moe Yoshii is.

Evangelion maybe, or Lain
Hard to say, are there many anime out there in the same vain as Fight Club?
On a comprehensional level there's a lot of anime that make a lot more sense on the 2nd viewing, but anime has this problem with sakuga where those moments aren't as hype on a second viewing
AoT/SnK is a show that I feel gets worse on repeat viewings to be honest
The series is largely reliant on the hype of the next plot twist but, once "the cat's out of the bag" it gets kind of dull
It's not that I have anything bad to say about the series, but once "you know what's gonna happen" it feels like aot/snk is way less engaging on repeat viewings

Same here. Just the first episode, the very beginning, noticing a whole lot more. The Obelisk, man, the fucking Obelisk. Everyone who is texhed up is connected.
