There are so many great options!
My top three are Ciel, Milim, and Veldora; although I acknowledge that of those only Ciel is plausible since he sees Milim as a child and himself as too much of a straight man for Veldora.

Ciel x Rimuru:
Spending years with a loyal partner as she grows as a person and develops new emotions and feelings sounds like a really wholesome romance arc.

Milim x Rimuru:
Of the Demon Lords, Milim seems like the happiest and has the healthiest attitude towards her role. She doesn't let her immense age and power influence what kind of life she lives, instead choosing to live whatever life makes her happy.
Rimuru is pretty close to Milim in terms of personality, and regardless of whether they're a couple or not, he'd do well to walk the same path as Milim. To become old, but never feel old.

Veldora x Rimuru:
There's not many people who'd be able to make Rimuru feel like an equal in a relationship, but Veldora is one of them.
Strong, greedy, and playful, he's the perfect kind of guy to get a high-and-mighty Demon Lord to relax and have fun. Plus he's really hot.
