Not quite. Ed traded his leg for the knowledge he gained, Al traded his entire body. Al offering his entire body for a lot of gate knowledge meant that Ed could trade his entire gate for all of Al, because Al's body was never worth more than the Gate. While the whole "transmute your gate to get a get out of jail" thing pops up, it should be pointed out that it only worked because Ed and Al had their interconnected gate space. You leave though the gate and if you give it up while in there you no longer have an exit.
The ending was pretty retarded since it basically implied anyone could become a master alchemist by trading their entire body and then having someone else trade their gate for their sake.
This is pretty much a foolproof method of making a God tier alchemist army and any state would be sure to use it

So, why did Envy suddenly remember that he was suppose to be jealous of humans from Ed's sappy speech? Is it because the author was not so subtly sliding in a "revenge bad" message and didn't want the characters to dirty their hands and put down a mass murderer?

You missed the entire point. Ending was about men are not gods. Alchemy doesn't make you a god. Alchemy is just a tool. So in the end Ed no longer need it.
Second point was that they could have always gotten Al's body back. It was always about equal exchange. They gave up body parts for easier casting alchemy and a incomplete homunculus. If they didn't panic and were more experienced, they could have reversed the trade and been back to normal by episode 2.
Both are pretty clever foreshadowing that was hinted at since episode 1.
Envy was just having a bad day, week really, basically their whole schtick was trying to escape its insecurity that it was a little piece of shit by tricking people and reducing them to pathetic savages. Now out of options, surrounded by people who defy the only thing it feels makes it above humans, and finally its told by its enemy that he feels more bad than angry about it now. It just couldn't recover.
