Because of Kubo's laziness. The anime already caught up to the manga and adapted everything so far.
Kubo only bothered to write. 4 chapters. He then promised to write more and give the manga a "season 2", but never did.

It was literally just something Kubo pushed to fall back on. When he got his Bleach anime series back he put 100% of his focus on that.
Because Kubo doesn't know how to write stories. He just wants to draw stylish characters beating eachother up.

Kubo doesn’t want to work on something while the anime ends up looking like trash which is why he’s supervising it and putting in scenes that couldn’t make it in the manga

They adapted the whole manga.
The series lacked potential desu. The Grimmjaw looking paint guy is supposed to be their equivalent of a squad captain, and he seemed unimpressive. Their pistols look like shit and seem to have the potential to have powers in them like shikai and bankai. They're witches but we dont see them going around doing their equivalent of Kido spells. Dragons as enemies seems more constrictive than soul devouring monsters, and the dragons they take care of are boring fantasy alternatives of agriculture and industry.
Seriously, any single Shinigami taking a plane to London would probably be able to handle the 7 disney princess dragons they seemed to be setting up.
